Good Evening Peoples! I am here with the second bakealong challenge which is …..drumroll…..Inside-Out Pumpkin Muffins! These were the perfect challenge for last month to kickoff the pumpkin season. Also of coarse being only the second challenge in and I barely made it in time because I finally got around to baking them on the last day of the month.

These muffins are fun because they have a tasty strudel on top and a hidden pocket of cream cheese in the middle! We started by mixing up the filling and hubby mixed up the strudel.
After we had the filling and topping made we put all the batter ingredients into the trusty stand mixer and beat it up…
To make life easier we moved everything to the table
We used a cookie scoop to put a little batter into each muffin tin and a little scoop to put a dollop of the sweetened filling on top followed by another scoop of batter
Top with strudel! Here is hubby getting the strudel just so…
Into the oven for baking…
Look how lovely they cook up..
I could not wait till they cooled to search for the hidden secret filling….
